Add salt and baking soda in maida, mix well. Now add oil for moin and mix, crumble with hands the mixture. Add water little at a time and knead the dough. It should not be too hard or too soft. Keep for rest for 10-15 minutes.
In a pan take a tsp oil and roast crushed spices cumin fennel and coriander. Add a pinch asofoetida,salt red chilli powder and grinded urad daal. Stir continuously avoiding burning at base. Stir cook until all moisture evaporates and stuffing gets cooked.
Make equal portions from the dough, it will be approximately 6 and also from stuffing accordingly.
Take each portion from dough, make ball, flatten with your hands, keep a portion of stuffing and close. Seal it and again flatten with hands carefully or roll lightly with rolling pin on a board.
Make all kachoris same way.
Now heat oil on a kadahi. Put kachori one by one and fry On medium heat until crisp and golden from both sides.
